Installing Ubuntu on an External Hard Drive.

I've got a really nice, small 60 GB external hard drive. My mom mentioned the other day that she really enjoyed using Ubuntu instead of Windows, but she still needs Windows for work and, unfortunately, WINE just will not cut it. So, I want to install Ubuntu on this external hard drive. I've got a vague idea of what to do, but I really don't want to royally screw anything up. So, I figured it would be a good idea to post here first.

What steps should I take in order to achieve my task?

    Dual Boot? Seems like the easiest solution.

    I'd rather just have Ubuntu completely contained on the external HD so I can just move it around.
