Unlike when a series is kinda holding your interest, but it's not a priority for you, are there are times when a show is very good, but you don't complete it right away?

I'm calling it "fine wining," where you're keeping this anime on hold for yourself so you can come back at a later date and enjoy what you've forced yourself to miss.

Legend of Galactic heroes is that, while I talk about it a lot and recommend it to many I've never gotten past eps 36 or so and keep starting over again, I must have watched the first 10 eps over 10 times. I am scared that I will reach the end and there will be nothing left for me in this world....
