It's not more sophisticated - both are basically intended for teenage males. Giant Robo and Love Hina manga were both published in shonen magazines intended for teens. You just like one more because it has dumb (but awesome) action instead of dumb jokes. Frankly, I think it's bullshit to say that Love Hina is objectively better or more mature than some of the stuff on your list (which is what you are doing). I also think it's bullshit to say there's somehow something wrong with liking it. Different strokes, seriously. People have different tastes, get over yourself.

Dude, you did not get me I was comparing the anime of Giant Robo from the 90's OAVs with Love Hina, and Giant Robo is a lot better than Love Hina in every way possible, there is no comparison, I mean have you watch the Giant Robo OAVs and have you watch Love Hina.

Love Hina is drivel. There is only ONE joke, and it relies neither on wit nor randomness. It's be one thing if the violence was subtle or extreme like in Dokuro-chan, but instead, it's just overemphasised. Instead of making laugh out loud moments it makes those " . . . " moments. Not good.
And honestly, varying tastes can go to hell. If something wasn't crap just because someone liked it, then just about every anime would be "good". For instance, I like to watch Galaxy Angel, and read NGE Angelic Days and Inuyasha. Do you think I consider them good in an objective sense? Fuck no! I think they're badly-written, but for one reason or another, I like em'. Doesn't mean I think they're good be any means, though.
It's a matter of favorite vs best, so to speak.
Oh, one more thing. - 90% of the time, if the cover has two bishonen dudes getting reeeeeeeeeeeeeeeeeally close,it sucks. Let's face it people, the vast majority of shonen-ai and yaoi is about as original as most harem anime.
You know you never see a show where its mostly girls, with one or two guys, and it isn't a harem show (at least that I can think of.) I find that to be really disappointing.

The Good: *The main character is a saint, and so its not totally unreasonable that he has lots of girls wanting to be with him. *In the last arc he demonstrates his saintlyness in a particularly cool and dramatic way. The Bad: *They put in a loli to please the pedophiles, even if the main character isn't interested in her. *They do the standard h-game conversion method of having the characters play out each of the storylines form the game, even though it doesn't make sense. *Other parts of the plot are also deeply stupid. Depends on your tastes. *Lots of fanservice involving 16 year old or so girls. At this point in my life I prefer more subtelty and somewhat older women, but whatever floats your boat.
Recommendations: Personally I'd recommend watching watching 22-24 just for the awesome demonstration that some Harem show leads can in fact end up being really cool. Episodes 19-21 are probably also worth your time just for the number of in-jokes they've spawned. Watching the rest if you think you'll enjoy the fanservice.
Yes, Shuffle! is good when it got to the latter half or so, the mood just swung over to the other side compared to other animes of that genre.
I don't really have a method of determining bad anime by the box itself, except maybe the title art; but then again most of the animes I saw and enjoyed had good title art on the cover. Other then that, it's just tons of fansubs and seeing for yourself.
Actually, now I think of it, the logos also help, I avoid Shonen Jump animes for obvious reasons. SJ-Advance however...that's another story.
(I admit I watch harem anime series ONLY if they manage to make me laugh within one episode, like the guy, and the supposed heroine)
Any anime based on a date sim game cannot be good.
Correction: Any anime based on a video game that isn't Fatal Fury cannot be good. Though I admittedly have not seen Fate/Stay Night, so I might have to withhold judgment on that one.
I like Shonen Jump manga, but I can't watch the anime adaptations. Filler and the amount that they draw things out makes shonen jump anime almost unwatchable.
