When making green tea, at least with the types that I use, if the water is boiling then it's too hot and will create a bitter flavor. Some of the more expensive tea I have works better when the temperature is 45-65 degrees which is really fucking delicious when done right, meanwhile higher temperatures will cause the tea to become bitter. Most teas I have are best in the 80 degree range which is pretty close to boiling but not close enough that putting the tea bag in first is a good idea. I don't know if it's different with other types of tea, but that's my experience with green tea.
Quickly identified that person as a german speaker by seeing the german editions of Yotsuba, GTO and Genshiken in the bookshelves. Then of course I read what it says than just staring at the pictures and see it's in switzerland.
