The title is pretty self explanatory- what's your favorite music in anime?
My favorites are:
FLCL- kickass J-rock. Just fucking awesome. I have both OSTs and they're great (and the fact that rightstuf has them on sale for $6 each....yeah, go get them!)
Cowboy Bebop- obvious reasons
Fullmetal Alchemist- great openings and endings. Got me into L'arc en ciel, Asian Kung fu generation, and Porno Graffiti.
Death Note- Good openings and endings. Got me into Maximum the Hormone.
Inuyasha- crappy as the series may be, the openings and endings are pretty good and have a nice classic Japanese feel to them.

Since I am not going to recount my "Animetard" playlist on my iPod, I'll just say that the songs in One Piece and Sayonara Zetsubou Sensei are great.
I also want to put in NANA (which is music focused anyway), Gravitation (also music focused), Eureka Seven, Gurren Lagann and although I hate it, Bleach.
Yoko Kanno is a given, as are the Pillows.
Trigun's album "The Second Donuts" holds a special place in my heart as well for its blues/Western draw.
I also extremely love the Samurai Champloo OSTs. It introduced me to Tsutchie, Nujabes, Fat John, and MINMI. I don't think I can ever get tired of those OSTs.
I also like Yuki Kajiura a lot. If I had to pick a favorite CD for her it would probably be Future Sounscape III, with Dreamscape, Slipstream, and Swordbreaker.
As for other favourites... gah. Anyone who's listened to my old podcast knows, I like so much anime music, it's hard to choose. The only thing I know for sure is that my number one two* favourite anime song of all time is "Virtual Star Embryology" from Utena, partly due to allegiance to the show and mostly due to the might of J.A. Seazer. Heck, all of Seazer's Utena music is way up there in favourites territory for me (I don't really like his non-Utena stuff, though; too esoteric even for me).
Hm, other faves... I guess I could just copy and paste the favourites list I made for my podcast's site. Save me some time and effort. XD So, apart from Virtual Star, I really like "Higurashi no Naku Koro ni" by Eiko Shimamiya (When They Cry - Higurashi), "Senobi wo Shite Follow You" by Mahou Tsukai Tai (Magic User’s Club), "Re-sublimity" by KOTOKO (Kannazuki no Miko), "Tori no Uta" by LIA (Air), "You Won’t See Me Coming" by Jean-Jacques Burnel (Gankutsuou), "Fields of Hope" by Rie Tanaka (Gundam Seed Destiny), "Galaxy Baban ga Bang!" by Angel-tai (Galaxy Angel A), "Breeze" by Megumi Hayashibara (Slayers TRY), and "Cloud Age Symphony" by Shuntaro Okino (Last Exile).
* - "Rinbu Revolution" by Masami Okui finally overtook VSE. I thought that song was played out for me, but hearing it again recently while re-watching Utena, it's still <3<3.
So that's a show with music great in context, but shitty outside of the show, as far as I'm concerned.
And yeah, fuck yeah Pillows! Though I really haven't listened to much of their stuff outside of FLCL.
Everything from Gurren Lagann is awesome.
"Shounen Heart," though, now there's a Eureka 7 opening I dig a lot. "Days" is pretty darn good, too.

Tenchi Muyo and Tenchi Universe- Tenchi Muyoi Ryo-Ohki's Theme, Washu's Lullaby, Talent for Love, Dimensions of Love and Forevermore.
Utena TV- Shi No Aphrodite, Zettai Unmei Mokushiroku with Banyuu Inryoku, Seijuku Nenrei Toumeiki, Hitomi No Naka No yokan, Yumir Miru Saibou, Pessimism, Tenderness and Aphrodite Scat.
Maison Ikkoku TV show- Will Tomorrow be Brighter, Cinema, Suki Sa, Fantasy and Hello Sadness.
Blue Seed- Carnival Babel and Tounch and Go.
