Marine biologist (before I knew it involved more than scuba diving with a camera), followed by comic book artist, followed by video game character designer in High School/College.
I pretty much wanted to be a comic book artist my whole childhood, until I saw Aladdin -- then I wanted to do animation, then I wanted to be an illustrator, then a concept artist. Now I'm back at comic book artist, and I think it's gonna stick.
I can't really remember what I wanted to be as a kid, but I will tell you, my ex-fiancee always wanted to be a viking when she grew up - and she never really grew totally out of it, either - she sticks firmly to the conviction that her dream job is being one of the Viking-actors at the Jorvik Viking center - though she's happy to settle for her second choice, which is something in the field of animal science/veterinary science.

This reminds me of a quote from the Norwegian punk band Turbonegro. Something like "Norwegians are always going on about being descended from vikings. We aren't descended from vikings. Everyone else is descended from vikings. We're descended from the guys who stayed home."
For a while I wanted to be, predictably enough, either a firefighter or a veterinarian. Once I actually started to think about it I decided that I wanted to be a syndicated cartoonist. By the time I was 10 I had written several hundred comic strips, and Scott Adams and Bill Watterson were my heroes for much of my childhood. After that I floated in between stunt double and video game designer, eventually settling on video game level designer around the age of 13. That petered off after a few years, and now I haven't got a clue what I'd like to do.
At which moment? I don't know about anyone else, but whenever I learned something new as a child I would get so excited that I thought it would be my life's work. I used to think I wanted to be a lawyer or an actor. The realities of each profession (hating my job in the former and needing to eat in the latter) killed the desire for those professions, though I act as a hobby and am working as a paralegal while I complete my Masters in English Education. The one constant was my desire to be a mother. EDIT: I just realized I posted this under MR. MacRoss' account and not my own. Oops.
I was 8 when decided I want to be an animator. Now I still want to be an animator but more specifically in storyboards. Also, a comic artist. That was my second dream job all my life.

When I was a child I wanted to be a cartoonist, and that pretty much was it for most of my life until I was 12 or so, then it was a computer game designer, and as of yesterday I've just finished my final year of BA Computer Games Design. So I guess I'm stuck with it now.
Spin-off discussion. The insanity that would be the world if YOU were god. Armies of Kenshiro headsploding horrible, tentacled, furries. Mechs punching each other in the face 24/7. The sun just a series of disco lights. All night looong.
