Well you can turn off some of the ad targeting stuff in the account settings, and turn off Google now. If you're really paranoid use a version of android without Google Play Services and use something like GApps Browser to use their mobile sites sandboxed from your normal browser to limit tracking, but that's not really practical since so many apps use Play Services.
Really the only way is to turn off GPS and wifi when you don't need them. They can still track you but it will keep most of that kind of stuff out of your face.
I'm a bit skeptical, but excited! The guy they beat has a 2dan (about 330th or so best player out there) rating and his official record is a bit spotty on the few sites that I know of that archive all the professional games. Lee Sedol, the guy the talk about playing next, is 5th in the world. Only fractionally weaker than the top players but that fraction is important, at least as far as humans are concerned.
I didn't know the 2dan they played against so I looked at the games that are out there of his and they seem, off?, I don't know how to describe it, he definitely played in an unorthodox way in those games I looked over.
I'm not entirely shocked at the technology they're using to do this, deep neural nets have had a great amount of success in a lot of applications that we thought were intractable. It's really been a game changer for machine learning.

I really enjoy using the Google Cultural Institute to look at art in museums I am unlikely to go to. Also there's a great Chrome extension which gives you a painting from the collection on new tabs.
