She's loyal to Princess Celestia and her friends. There would have been a peaceful resolution to things until Applejack of all people decided to butt in and start trouble.

AppleJack is really just a simple, if a little close-minded, and really stubborn, country pony. She is set in her ways, as we've seen in Applebuck Season, and she's going to stand by her family, right or wrong, because to country folk that's about all you've got to count on. I don't begrudge her for sticking up for the Apploosans, but the episode was supposed to illustrate that there's two sides to every issue, and the people on each side need to see that and come to an understanding (which Pinkie Pie put in not as many words, and less eloquently).
In this case though, her intervention led directly to conflict and I want to say some damaged property, and at the very least a loss of good pies. The ponies of Apploosa were more than willing to listen to the Buffalo's case until she stuck her nose in. It was convenient for the plot but it was a really poor showing for Applejack, that episode is why she's one of my least favorites of the group.
An article on Monday about Jack Robison and Kirsten Lindsmith, two college students with Asperger syndrome who are navigating the perils of an intimate relationship, misidentified the character from the animated children’s TV show “My Little Pony” that Ms. Lindsmith said she visualized to cheer herself up. It is Twilight Sparkle, the nerdy intellectual, not Fluttershy, the kind animal lover.
Only once provoked by Applejack's aggression. Dash wants to help the buffalo communicate their side, and Braeburn is perfectly willing to listen, but Applejack is not and starts the conflict.

It can also be a case of old thinking versus new thinking, as AppleJack was stubbornly sticking to her position while Braeburn was willing to talk and possibly compromise.
