This can get quite tedious, Scott, so you really don't have to worry too much about it. You can still beat people without even knowing that EVs exist.
Good battle strategy will always trump EV training. That is how I beat the elite four in D/P with Pokemon that were all below lvl 50 when I entered. when I beat them all only one guy was above level 50. It was hard, but as long as you cover your types and now what types the enemy Pokemon are you can win.
i.e. a good level 40 electric type can beat a water type that is about 15 levels higher.
Also, some Pokemon will not give you more than one or two points per level even when you do EV train. In fact, sometimes EV training hurts you because points that would normally go into other stats are funneled into the stats you are training for. In the end it all evens out but the short term effects can be "interesting".
Also, there is a guy in Emerald who will tell you if your Pokemon is below, average, above average or exceptional. He will also tell you the Pokemons best stat. I have used him in lieu of EV training to insure that if I am raising a Fight Pokemon his best stat is not Sp Atk!
I'm very interested to see all of the final teams you guys make. I hope that there is an unexpected awesomely broken combo that someone comes up with so that I use it myself. :P

I managed to catch the pokerus in Silver long before I found out what it was. :< Haha, I skipped through Nurse Joy's little speil about how my pokemon were all healed like I usually did and it took me a second to realise she was saying something different. It was quite the WTF moment. I would have preferred a shiny though... I've never caught one (a real one. That gyrados doesn't count).
Does anyone know how evolution effects stats? Is it better to hold off on evolving your pokemon or do you want them evolving as soon as possible? Is it even necessary to evolve them for max stats? 'cause there's some 'mons in there that I don't really want to evolve ever. Uuuugly.

I am spending a lot of time berry farming right now, and digging for treasure in the underground. the only bad part aboutthe underground is that it is wi-fi and sucks the battery down quicker.

Not evolving often leads to different attacks being learned or the same attacks being learned sooner. Stats can also change based on what evolution you train it as.

Yeah, is there some sort of chart showing which Pokemon learn which abilities at which levels? I've been searching, and I can't find a useful one.

Okay, so evolving or not evolving changes the way stats are distributed but not the overall maximum? (Did that make sense?) That's good to hear.
Just had a quick look through serebii.net's pokedex and it looks like Chimcharr learns flamethrower at level 41 but neither of its evolutions ever learn it. Of course, keeping it back to learn that prevents it from learning a couple other moves. I never realised... Tricky!

I leveled up the Charmander on Leaf Green, and I evolved it to Charmeleon and Charizard at the absolute earliest opportunity. It learned Flamethrower at some point along the way. I have not used any TMs.
Because TMs are one-use I wait until I complete the game before using them. Even then I use them sparingly.
A key thing about TMs is that some of them will transfer to a newly hatched Pokemon. I gave Iron Tail to one of my Eevees and now all of it's offspring hatch with Iron Tail as a known move!
In Leaf Green I just beat the last Gym Leader. I still have to beat the elite 4, catch 2 legendary birds, go to the MewTwo cave, clean out the new special islands, and go around the world one more time making sure I got everything.
Meanwhile, I actually started playing Diamond. I restarted a bunch of times to get all the starter Pokemon, but now Rym and I both have all three. On the train this morning I made a bit of progress, and I just entered the coal mines. I need that first badge ASAP before my traded Pokemon get out of control! Stupid boost. In one battle my Chimchar gained three levels.
